Healthy Tasty Meatloaf with Oats

Ingredients

  • 1.5 lbs. Ground Beef
  • 1 lb. Ground Pork or Pork Sausage
  • 1 Yellow Onion, diced
  • 2 Celery Stalks, diced
  • 1 cup Uncooked Quick Oats
  • 1/2 cup Milk
  • 2 Eggs
  • 2 tablespoons Worcestershire Sauce
  • 1 tsp. Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 2 tsp. Italian Seasoning
  • 1/2 cup Ketchup
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Apple Cider Vinegar

Directions

  1. Preheat the oven to 350°F and spray your sheet pan with cooking spray.
  2. Combine the quick oats and milk in a small bowl, allowing the oats to soak up the milk for approximately 10 minutes, until they are “soggy.”
  3. Meanwhile, sauté the diced onions and celery on your stovetop in 1 tablespoon of butter until they are translucent.
  4. In a large bowl, combine the ground beef, ground pork, spices, Worcestershire sauce, sautéed onions and celery, eggs, and oat + milk mixture. You can use your hands or an electric mixer to combine all of the ingredients.
  5. Form a loaf (approximately 8″x4″) on your prepared pan, and bake for 45 minutes
  6. For the sauce: Combine ketchup, brown sugar, and apple cider vinegar in a small saucepan. Heat until it is bubbling. Remove from heat and let it cool. Top meatloaf with the sauce and bake for approximately 10 more minutes until meatloaf is fully cooked through, to 160°F.
  7. Allow the meatloaf to rest for approx. 10 minutes, and serve alongside mashed potatoes with green beans or veggie of choice. Enjoy!
